What defines our wines? Why is every bottle something special? Which emotions accompany our wines from pruning the vines to the moment of enjoyment on our nose and palate? What awareness accompanies our wines?


REGION & CLIMATE

The area lies in the heart of the Pannonian climate zone. Characteristic of this climate are hot, dry summers with moderate rainfall and cold winters with little snow.

An important factor for the microclimate is Central Europe’s largest steppe lake, Lake Neusiedl. The region’s distinctive typicity – juicy and deep-fruited, yet slightly salty in its spice – is due not least to local features: small and medium-sized salt and soda pans, an underground mineral-water lake, and the special Pannonian microclimate with Lake Neusiedl acting as a climate regulator.

Old vineyards, yield reduction and care in the vineyard and at harvest

  • OLD VINES: Old vines usually produce lower yields, but these grapes are especially concentrated and give the wine more intense aromas and greater density. At the same time, old vines have deep-reaching roots that ensure a steady supply of water and nutrients – which allows their wines to reflect soil and climate (terroir) very clearly. In addition, grapes from old vines often ripen more evenly, giving the wines a harmoniously balanced acidity and structure.
  • TARGETED YIELD REDUCTION: Besides old vines, we often actively reduce yields: for example, in winter pruning we leave only a few buds per vine and remove excess bunches in summer during “green harvesting”. This concentrates nutrients into fewer berries – ripening becomes more even, aromas more intense, and the wine gains quality.
  • THE RIGHT TIMING: In addition to yield limitation, consistent care in the vineyard and during harvest is essential: targeted management (soil, canopy, plant protection only when needed) keeps vines healthy; optimal timing guarantees physiologically ripe grapes. Through green harvest before picking and hand selection during harvest, only the best, undamaged berries reach the cellar – keeping the wine authentic and high quality.
  • SUSTAINABLE FARMING in the vineyard means, for us, ensuring biodiversity and soil fertility, conserving resources, and fair interaction with our environment and our employees. Harvesting at optimal ripeness, short transport routes from vineyard to winery, and rapid cooling of the harvested fruit on site.

We have imposed strict commitments on ourselves to meet our high standards for NESTOR Wine:

  • ORIGIN: 42 ha of sustainably managed vineyards around HALBTURN, wine region NEUSIEDLERSEE, BURGENLAND
  • COVER-CROPPED VINEYARDS: year-round, maximum 2 months interruption for soil care & re-seeding. sustainably managed vineyards with the special terroir around Halbturn
  • NATURAL FERTILIZATION: legume cultivation between vine rows
  • NO INSECTICIDES & HERBICIDES: no chemically synthetic insecticides and herbicides
  • MINIMIZED TRAFFIC IN OUR VINEYARDS: we focus on sustainability and responsible machinery use in the vineyard


Handcrafted precision in the cellar supports the character

  • NO ARTIFICIAL PROCESSING METHODS: We avoid reverse osmosis, freeze concentration, ion exchange, or similar processing methods.
  • CRAFT: Engaging with traditional craftsmanship in leading wine regions worldwide supports the distinctive character of our single-vineyard wines.
  • STAINLESS STEEL TANK: After fermentation, the wine often remains for some time in stainless steel on the fine lees (remaining yeast cells). Lees aging gives more fullness and a rounder, softer mouthfeel because the yeast releases fine compounds. At the same time, the neutral, closed steel tank adds no foreign aromas and protects the wine from oxidation – preserving freshness and varietal aromas.
  • SUBTLE USE OF OAK: Some wines mature in 500-liter oak barrels because they provide only a mild oak influence and minimal air contact. This adds fullness and structure without losing varietal and origin character.
  • CO₂ FOOTPRINT: Use of self-produced solar energy for processing; use of lighter glass bottles wherever possible to optimize the CO₂ footprint on the way to our customers.
  • CERTIFIED SUSTAINABLE: All cellar work is carried out sustainably and is certified accordingly.
